General overview

Refrigerated cellar for caviar or truffle storage

This refrigerated cellar for caviar and truffle storage, adjustable between -5° and +5°C, can store up to 5 kg of caviar (tins with a maximum diameter of 160mm and a total height of 240mm) or 60 cm³ of truffles.

Temperature :

  • The recommended storage temperature for caviar is between 0° and 4°C.
  • The recommended storage temperature for truffles is between 2° and 4°C.
  • The ideal temperature for tasting caviar is between 8° and 9°C.

Precise temperature control makes this cellar particularly suitable for storing delicate foods such as caviar and truffles.

Caviar should be consumed within 2 to 3 days of opening to guarantee freshness. Some types of caviar can be kept for up to 5 days, but it is generally advisable not to exceed 3 days to ensure optimum quality.

Truffles should be eaten quickly to enjoy their full flavor and prevent spoilage:

  • Fresh truffles should be eaten within 7 to 10 days of opening.
  • Canned truffles should be eaten within 1 to 2 weeks of opening, according to the manufacturer's recommendations.
  • Vacuum-packed truffles should be consumed within 7 days of opening.

The cellar's transparent front glass and LED interior lighting ensure excellent visibility of stored products.

An external digital display allows you to check the temperature inside the unit.

A lock secures the top hatch, but does not offer the protection of a safe.

Optional : the caviar cellar can be customized on 3 sides (front, right and left) with personalized stickers. See the example of the Paul BOCUSE caviar cellar at the Auberge du Pont de Collonges.

The cellar is delivered on a pallet, in a wooden crate.
